Let’s face it, Pinterest can be an endless rabbit hole of clothing, crafts and cookery. I currently have over 2,000 pins. They’re a mix of decorating ideas, recipes, inspirational quotes, crafts and a ton of other things I just plain like. I’ll be honest: I’ve probably tried about 1.79% of them. I made a wreath once. And I hung our kayaks on the garage wall. More than anything, I’ve tried some recipes because I’m always looking for easy dinners to make. Some were terrible, but some were delicious! Maybe you have a Pinterest board full of promising dinner ideas, too. Let me share my absolute favorites out of that 1.79% that met the “realist mom” standard: quick, easy and not super processed.

My 5 Favorite Easy Dinners From Pinterest
Cheese and Pasta. Seriously, can you go wrong? Because one of my daughters is a vegetarian, I make this with vegetarian “faux” ground beef and it’s still delicious.
This is a great way to use up any veggies you have hanging around in the fridge. Alternatively, just thaw a bag of a frozen stir fry blend, throw in some shrimp or chicken, and you’ve got dinner. Ta da! You probably have everything you need to make this in your fridge and pantry already.
I have a confession to make: I suck at grilling meat. I can barely manage to cook a burger without under or overcooking it. For some reason, I can’t screw this one up. The flank steak only needs to be marinated for a little while, and is ready to eat in less than 30 minutes so this has “last minute” dinner potential.
This is the dinner equivalent of the “Who Can Keep Quietest The Longest Game.” The kids can practically make this themselves. You provide the fillings (I usually give them whatever is left in the fridge, along with sauce and cheese) and give them the “treat” of cooking their own dinner. It’s all how you sell it, Mom!! It’s not included in the recipe, but my preparation usually includes a big glass of wine for me as the kids cook…this takes the cake in “easy dinners.”
Okay, technically this is breakfast, I know. Hear me out – it’s quick, you can throw almost anything in there, and it looks fantastic when you pop it out of the oven. I like this recipe because it doesn’t involve a ton of cream or milk like some frittatas do.
