S’mores Bars is not what I had planned on making for today’s post. I made the most beautiful Black and White Cookies. They were gorgeous. They also tasted awful. Even the dog spit them out. The odd thing is, it was the frosting, which was made with confectioners sugar and water. I’m not sure how I screwed that up – but I did.
Bad baking happens. Thankfully, I had time to come up with Plan B. I needed a quick and easy recipe that would be delicious. And Beth-proof.
This has to be one of the easiest and most kid-friendly recipes I’ve ever posted – I dare your kids not to like these!
Easy S’mores Bars
Adapted from The Ultimate Cake Mix Cookie Book
1 box white cake mix
1 1/4 cups graham cracker crumbs (I smashed up one sleeve of graham crackers and used those)
1 cup (2 sticks) butter, melted
1 – 23 oz. bag of milk chocolate chips (about 3 cups)
1 – 10.5 oz. bag of mini-marshmallows (about 4 1/2 cups)
Preheat the oven to 350 degrees. Mix the cake mix, graham cracker crumbs and butter in a bowl with a wooden spoon until combined. Wet your fingers and press the mixture into an ungreased 13″ x 9″ baking pan. Bake for 18-22 minutes until just set.
Remove from oven. Immediately sprinkle evenly with chocolate chips. Let this stand for about 5 minutes so the chips soften, then spread them gently over the bars.
Pour the marshmallows over the chocolate. Set in oven approximately 6 inches from broiler element and broil until marshmallows are slightly browned, about 45-60 seconds. Keep an eye on the pan – the marshmallows can go from brown to burnt in seconds!
Set pan on rack to cool for about 20 minutes. Cut into bars. Serve gooey and warm or allow to cool completely.
It’s freezing here right now but these easy-peasy S’more Bars made the kids feel like they were right by a summer campfire!
